Obesity IS a symptom of gluten sensitivity. Maybe if you had found out that you were gluten sensitive before you had surgery, it's possible that you might have been able to lose weight and avoid surgery.
So the answer is that it's unlikely that the surgery caused it or that post surgery symptoms are 'mimicing' gluten sensitivity. You've probably had symptoms of gluten sensitivity for many years (obesity, among other symptoms that you've probably had in addition to obesity), but no one recognized them.
